1 12 oz. can of sliced pickled jalapenos or jalapeno/carrot mixture.
 
2 scallions, thin sliced
 
4 eggs
 
12 oz. sharp cheddar cheese

jalapeno pie

A time tested favorite. An appetizer pie of pickled sliced jalapenos, cheese and eggs. Spice it up with sliced scallions or black olives. Perfect for parties, mix it up and pop it in the oven when you get there. Perfect with a drizzle of baby red's Pineapple Endorphin Rush  or Yummy Rum Tummy hotsauce.
  1. Preheat oven to 375 F and grease a 9" pie pan.
  2. Line the bottom of the pie plate with drained jalapenos
  3. Mix all other ingredients and pour over top of peppers.
  4. Bake in oven for 30-35 minutes until golden brown on top, and egg mixture has set.
To spice it up a notch, consider adding up to 1 tsp of aji amarillo or chipotle powders to the batter.
